It seems like there's a lack of moisture from the fries (due to salt, and it's a fairly dry product) that's preventing them to mold. I feel that a similar thing would happen if you put salted chips inside a jar and left them like that.

An experiment I'd be interested in seeing is having a control where you take fries, and put them in a jar just like the video, and in another jar, same fries, but spritz some water to see if that caused the fries to begin molding.

before the age of refrigeration, 'salt' was the go to preservative for precisely the same reason. When you want it, you would simply add salted pork/fish to soak in some water to remove the salt preservative then eat.
