If you use it. Your photos are online. Even if you told it 'do not upload my photos' the second you fire up a new device and sign on, that fucker overrides it with a LOL U CHANGED UR MIND! and commences uploading every, single, fucking, photo, you, have to your online album.

If you're using a smartphone, it's extremely likely that you're being spied on regardless of what's installed. That's the entire purpose of smartphones.
Your best chance of limiting/interfering with that spying is rooting the phone and installing custom firmware. If you're not willing to (or can't) install custom firmware, at the very least root the phone and remove all Google products and any other untrustworthy apps you can do without, then install firewall and connection monitoring apps, and remove the battery from your phone whenever you're not using it (or put the phone in a Faraday bag or small cookie tin).
Also, keep in mind that the Android OS was created by Google, so you're certainly not fully purging Google just by removing their installed apps.
Also keep your eyes open for the McAfee Privacy Phone .
Best possible advice I can give however is to just not use smartphones that still have transmitting capability.
