The people leaving for rural towns are going to get a HUGE awakening. I grew up in a rural town in Pennsylvania. I moved away over 30 years ago, but still go back now and then. Not much has changed. A couple new eating places and that's it. You still have to plan your meals for the week or month, because the "good" grocery store is 25 minutes away and you can't just run to it every time you're out of something. By 9pm the town is silent and the businesses closed (except the 2 bars). There are no concerts, theater, or symphonies. But the local high school does have a band. If you want to go to a real concert, that's a 2 hour drive one way. Oh and privacy, nope. Every single person in town will know your business (but they will also be there for you when times are rough). Also, try and change these people or make trouble? Country towns have their own kind of justice, they don't call the police. There is no way a New Yorker would last two weeks.
